Veggie Meatloaf

Recommended because:
This is a great way to hide veggies, so my kids would eat them.

Ingredients:

1 pound ground meat
1 pound ground turkey
2 eggs
1.5 cups regular rolled oats
1 teaspoon dry mustard powder
1 teaspoon salt
1 tablespoon ground black pepper
1 tablespoon dried parsley
1 tablespoon minced garlic
1/2 cup skim milk
1/2 cup ketchup
1/2 cup finely chopped onion
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped zucchini
1/2 cup finely chopped celery

Directions:

In blender mix:
1 tablespoon minced garlic
1/2 cup skim milk
1/2 cup ketchup
1/2 cup finely chopped onion
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped zucchini
1/2 cup finely chopped celery
1 tomato peeled

Note: You can skip blending the vegetables and simply add them to the mixture below finely chopped. I blend mine so my kids cannot see the veggies in the meatloaf.

In a separate bowl mix:
The blended mixture from above
1 pound ground meat
1 pound ground turkey
2 eggs
1.5 cups regular rolled oats
1 teaspoon dry mustard powder
1 teaspoon salt
1 tablespoon ground black pepper
1 tablespoon dried parsley

Place mixture in a 5×9 inch loaf pan
Bake at 325 degrees for about 1.5 hours
Center of meatloaf needs to read at least 160 degrees
