Easy Rice Pudding

Recommended because:
Children with food aversions often avoid foods with mixed textures or lumps. Entice them to give it a try with this yummy recipe. Prepare with whole milk for additional calories if needed.

Ingredients:

2 cups cooked long grain white rice
2 cups milk (use whole milk for additional calories if needed)
3 tablespoons butter
1/3 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon cinnamon

Directions:

Mix all ingredients in a sauce pan over medium-low heat.

Bring to a gentle boil, stirring often to make sure it doesn’t burn.

Cook for 15-20 minutes, or until thickened.

Let cool for approximately 10 minutes. Refrigerate any leftovers, or if you prefer to eat it cold.
